GET IN MY BELLY BANANA MUFFINS


Are you like me when it comes to bananas? I ALWAYS buy bananas when I go food shopping. My husband likes them as a snack at work so I always make sure we have them on hand. The problem is when he has his three days off those once yellow/greenish bananas quickly turn brown. My husband hates brown bananas hahah. Seriously if it is the slightest bit of brown he will throw them out. I like to save them for smoothies OR my "GET IN MY BELLY BANANA MUFFINS". They are so good, I secretly think my husband lets the bananas get brown on purpose now just so I can make these. And the best part? They aren't bad for you!

What you will need:
4 ripe, and I mean RIPE, bananas 
1 egg (lightly beaten)
1/2 cup of melted coconut oil
1/2 cup of honey
1 1/2 cups of Flour
1 tsp Baking Soda
1 tsp Baking Powder
1/2 TBL Cinnamon
pinch of salt
1 cup of JUMBO semi sweet chocolate chips

What to do:
Preheat oven to 350
Mash bananas in a large bowl. Use your hands and make sure they are MASHED well!
Add lightly beaten egg, melted coconut oil, honey, and cinnamon. MIX MIX MIX!
Next add flour, baking soda, baking powder, & pinch of salt. Mix everything together until all ingredients are well incorporated. Then add chocolate chips. 
Lightly oil cupcake pans and evenly scoop in batter until batter is gone. (Roughly 1/3 cup per scoop).
I like to add a little cinnamon and sugar to the top of them before they go into the oven ;)
Bake those bad boys for 20 min.

I couldn't take photos of these delicious creations without taking a bite out of one! hehe WHOOPS! Once you make them you will understand.

These muffins are SOOO good and not bad for you! If you want an even healthier option leave out the chocolate chips. BUT I love chocolate and banana together sooooo yeah I won't be leaving them out anytime soon!
